I’m excited to introduce you to SIDRA — our newest barrel-fermented offering. Several months ago, four barrels arrived from Jalisco, Mexico that had just been emptied of their Extra Anejo Pure Blue Agave Tequila. We filled them with Imperial Handlebar Hard Cider and let them ferment right in the barrels. After a week of wild activity (if you look in the back area of The Old Mine, you can still see chunks on the ceiling from a fermentation explosion!), it settled down and fell asleep for three months. We just woke it up and it’s fantastic! Makes me want to find a beach and take a nice little siesta. Cheers!
